Sweet Upside-Down Pineapple Cake

When packing for camping, make sure you have a list of the foods you will be cooking in camp so you
can buy them and conveniently pack them. This ensures that you only bring the ingredients that you
need, no matter how many days you plan to go camping.

Here’s a pineapple cake recipe with ingredients that could easily be packed in Ziplock bags and also
cooked conveniently.

Ingredients:

4 slices of Dried pineapple (chopped) or
1 can of Crushed pineapple (dried)
1 cup of Bisquick
1 tbsp of Sugar
1/4 cup of Brown sugar
1 cup Boiling water (to re‐hydrate the pineapple)
1/3 cup Water for dough

Preparation:

Place the ingredients in separate bags. One bag should contain the pineapple; one bag should contain
the Bisquick and sugar mix; one bag for brown sugar. Label them accordingly. On the bag, also indicate
the amount of water needed to reconstitute the mixture.

If you’re using a pre‐dried pineapple, make sure to cut it into really small pieces because it needs to re‐
hydrate as fast as possible.

If you’re drying your own pineapple, shred into small pieces.

Get one cup of water and add the dried pineapple to re‐hydrate it. Cook for 20 minutes. Add the brown
sugar by sprinkling it evenly.

Add1/3 cup water to the Bisquick mix to soften the pineapple. Add it to the pineapple mixture. Put it on

the stove to cook it on a low fire for about 10 minutes.

Let it cool and serve.
